It has been one week since I began 16/8 intermittent fasting. When I started, I was 118.4 lbs. Over the next week, my weight fluctuated between 118 and 119. I began to question if this was the right thing to do and if it was time to make some changes. Today, I was thrilled to see 1 pound less weight! It’s likely water weight but it is still motivating to see as little as possible!
This diet was easy to follow. I eat two meals and one snack per day. I enjoy coffee with coconut creamer, unlike the Isagenix diet. I drank coffee with coconut creamer for a few days before I had my first meal. I’m not sure if it will slow down my progress or break anything, but it is a process of trial-and-error. Food-wise, I try to eat less than 1200 calories per day.
How do I feel? I feel great! I feel great! However, I noticed that I wasn’t getting good sleep since starting this. After my body adjusts to the routine, I expect to get good sleep again. Here are a few of the dishes that I created. They are both healthy and delicious.
This dish is easy to prepare:
Ingredients:
1 bundle Spinach (not baby) washed and cleaned 1/2 Pound
1 clove minced garlic
1 tbsp minced fresh ginger
1 1/2 tsp soy sauce
1 teaspoon chili oil
1 teaspoon sesame oil
1 tsp vinegar
A pinch of sugar
Sea salt for your taste
Boil 8-10 cups of water in a large saucepan. Cover the pot and blanch the spinach for 30 seconds to one minute. You can add olive oil to the water. Strain the spinach, and then rinse with cold water. You should get rid of any excess water.
Combine all the ingredients except for the spinach. Serve the mixture with the blanched spinach.
